Brooklyn Bookworm Brings ‘Literary’ Knishes to Deli-Starved Texas

What happens when a homesick, Brooklyn-born bookworm decides to start making his own knishes in deli-starved Austin, Texas?

You get , a wholesale bakery from which Joel Weinbrot slings up slightly loony literary-inspired knishes.

The Austin Chronicle reports Weinbrot’s wacky flavors include Scheherazade, made with Middle Eastern spices, and Dulcinea del Toboso, a mix of spicy (chipotle) and sweet (brown sugar, maple syrup).

The reference is Don Quixote, in case you’re stumped.

Weinbrot uses goose schmaltz in his dough, cooks them on hot stone, and makes fillings in-house.
